Why: Comfort food in <6 minutes for <5 dollars and 340 calories

I try to eat vegetarian unless I'm really craving meat and/or someone went to the trouble to cook meat for me. The spongy particleboard-chicken and sad shrimpy shrimp featured in most frozen meals count as neither craveable nor homecooked, but I love the convenience of frozen meals, so I love Amy's. They're pricey for frozen meals, but still cheaper than going out to lunch and easier/yummier/healthier than making sandwiches.

One of Amy's new offerings is a Southern Meal of Cornbread & Beans with Sweet Potatoes and Greens, and guys, it rocks the freezer section. The beans are picnic-style, the sort of beans I think of when I crave baked beans: big pintos baked in a savory-sweet sauce, less sticky than the sauce you'd get out of a can of Hunt's and obviously minus the bacon, but just as tasty as the ones my grandmother used to serve alongside hot dogs and mac&cheese. The beans cover the cornbread, keeping it from drying out and complimenting its salty-sweet flavor. (If you dislike sweetish cornbreads, I wouldn't recommend this. It's not as cloying as Boston Market's cornbread, but it's definitely on the sweet side.) The thick-meal bread contains kernels of baked corn (not too chewy, not too raw) and specks of tangy, salty pimento, making it seem like a worthy centerpiece to the plate rather than a side dish putting on airs.

The two side items provide a nice compliment. The sweet potato mash reheats fairly well, and doesn't contain much added sweetening or seasoning, which I find a lovely change of pace from sweet potato mashes that taste like pie filling. Not that I dislike excuses to down cinnamon-sugar and claim I've eaten a vegetable, but I like the flavor of sweet potatoes themselves, and that flavor comes through here, fresh and slightly sweet. The greens, a mixture of collards and kale, are chopped fine and salted enough to seem satisfying rather than healthy. They contain a few mushroom slices, too, which in my meal were sort of shriveled and unnecessary, but could be eaten around.

The meal was filling for me (granted, I am a tiny lady), and had enough sweet in it that I didn't even crave dessert afterwards. It contains 340 calories, 10 grams of fat (5 grams of saturated fat), 25 mg of cholesterol, 780 mg of sodium, 8 grams of fiber, 11 grams of sugar, and 12 grams of protein -- which is a lot of salt if you're watching your sodium intake, but otherwise not too shabby for a meal.

My only advice (other than to check your teeth for wayward greens after you're done) is to take care not to overcook it -- it recommends a total of 5-6 minutes in the microwave, and I'd err on the low end of that. Cook it too long and the potato mash will get weirdly solid, the greens dry, and the beans hard.

In conclusion: I'm gonna keep a couple of these in stock. It's a quick, not unhealthy fix for some of the comfort foods I crave.
